Just a quick report back today on the pickled egg recipe I tried out on December 4th. It was NOT a failure! In fact, just the opposite…I sliced up an egg last night and devoured half of it like a starving pig. It was so good that I decided it needed to go on my salad for my lunch today (I make fabulous work lunches BTW…).
These eggs may not be as pretty to look at as a ruby-hued, beet-pickled egg, but the flavor of the pickling spice makes up for it. This is now one of my favorite egg pickle recipes. Did you try it out yet? If you missed it, here is the recipe.
